A new brunch OBSESSION!

Who doesn't love a good Spinach Artichoke Dip? I'd bet even people who say they hate spinach still love it. Now imagine that amazing dip smeared on a bagel and topped with melted cheese and crispy bacon and you'll immediately understand why I say this is my newest obsession. It's my new Four Cheese Spinach Artichoke Bagels!
If you saw my post yesterday, you know the recipe theme this weekend is "EASY" and this qualifies as well. To make the dip, I combined softened cream cheese 1 (I had a block of plain light cream cheese plus some chive cream cheese as well), mozzarella cheese 2, parmesan cheese 3, cheddar cheese 4, chopped artichokes (drained), chopped fresh spinach, minced red peppers, minced garlic, chopped fresh parsley, a pinch of red pepper flakes, salt, and pepper. At this point, it was already good enough to eat right out of the bowl!
Then I smeared it on fresh bagels (I used whole grain bagels to keep it a bit healthier), and topped with more mozzarella and cheddar before popping into a 350 degree preheated oven. I baked them until they were golden and bubbly (about 25 minutes) and then topped each bagel half with a slice of crispy bacon. Because what doesn't get better with bacon?
And if you are watching your carb intake or are on full Keto, you can absolutely skip the bagel altogether and bake the dip in a ramekin to be served with fresh veggies!
