Introducing my new Cheesy Sausage, Egg, and Potato Hand Pies! Puff pasty stuffed with cheesy scrambled eggs, maple sausage, and hash brown potatoes? Yes please! Best part - they're REALLY easy!
The secret to how easy these are: store bought hash brown patties and puff pastry! The only work involved in this dish is browning/chopping the sausage and scrambling the eggs with shredded mozzarella.
I thawed and rolled out the 2 puff pasty sheets and cut into 8 equal squares, then topped 4 squares with a hash brown patty which I had already partially cooked in the oven, then the cheesy scrambled eggs and sausage, brushed the edges with egg wash, and finally topped with the remaining puff pastry squares. After sealing and trimming the edges, I brushed the top with egg wash, vented them, and sprinkled on some "everything bagel" seasoning for a little extra flavor and crunch.
A very filling breakfast all in one package!
