Fancy doesn't need to be difficult!

Quiche Lorraine. Sounds fancy and challenging. Nope. It couldn't be easier. And that even includes homemade crust. I made the crust last night and it's just flour, salt, and diced cold butter in a food processor. Once it's all combined, all you need to do is slowly add one tablespoon increments of ice water while it is running until the dough comes together into a ball. Once it does, all you need to do is form it into a disk, wrap and refrigerate up to overnight, and then roll it out when ready to use. I blind-baked mine for 12 minutes before filling. Blind baking is when you cover with foil and weigh it down using pie weights.

The filling is eggs, heavy cream, bacon, caramelized onions, grated gruyere, fresh thyme, salt and pepper. Your house will smell amazing from start to finish!

My favorite restaurant Quiche Lorraine is at Petit Louis in Roland Park and they serve theirs with a simple salad dressed with a vinaigrette. I did the same but I made edible salad bowls out of Parmesan cheese. I scooped a 1/3 cup portion onto a baking mat, and baked 6 minutes until melted but pliable.

Then I used an upside-down glass to mold the cups. They firm up quickly as they cool. Easy but fancy! And carb-free!

Now this was a nice way to start a Sunday!
