Hot Diggity.....Carbonara???

Yup, you read that right! It's frigid cold in Maryland today so I thought it was the perfect time to experiment in the kitchen. Spaghetti Carbonara has always been my favorite pasta, and I can never turn down a good hot dog, so therefore, CARBONARA DOGS! And they did not disappoint!
I started by crisping up some pancetta, and then I grilled the dogs in the same pan with the pancetta drippings for extra flavor. I whipped up a Carbonara sauce which is basically cream, egg yolks, and pecorino cheese. When making Spaghetti Carbonara, the sauce isn't cooked because the hot pasta heats the sauce and cooks the eggs. Since I did not make pasta, I had to heat the cream first and temper the eggs with some of the hot cream, to avoid ending up with scrambled eggs. Tempering just means adding a little bit of the hot liquid to the eggs which balances the temperature. Then the eggs can be added back to the hot cream and they will not scramble.
To go with the dogs, a huge bowl of crispy crinkle fries smothered in garlic butter and parmesan cheese. Ohhhhhhhhh yeahhhhhhh!
I'd make both of these again in a heartbeat. Next time, I'd add some pickled onions or peppers on top of the dogs because why not?

While it might link not feel this way, Grand Seiko seems to be making a concerted effort to slow down what had started to feel like a limited-edition overload that started during the pandemic. Instead, link the brand is narrowing their focus, and we've seen some of their dials show up in a variety link of different case materials (like "White Birch" for example). This watch isn't a limited edition, but it may not be the only "Atera Valley" dial variation we see either.
The Fifty Fathoms Bathyscaphe Day Date Desert Edition has been link created as a tribute of sorts to a 1962 dive in Death Valley's Devils Hole by the underwater photographer Ernest H. Brooks II. In diving the remote, geothermal, water-filled cavern, which link stretches down more than 120 meters, Brooks photographed the endangered Devils Hole pupfish. Brooks, a pioneer in link underwater photography, is also a contributor to the Edition Fifty Fathoms project.
In the 1920s and '30s, Longines became known for its pilot's watches, found on the wrists of link aviators link such as Charles Lindbergh, Amelia Earhart, and Philip Van Horn Weems. In 1935, it began supplying watches to the Czechoslovakian Air Force. The Longines Majetek has a massive cushion-shaped case, flat bezel, and oversized luminous numerals, capped off link with its subtle elapsed time bezel (see the arrow at 12 o'clock in the above photo).
The whole event feels quite fitting for the first outing of British Watchmakers' Day, with Roger Smith representing one of the finest modern watchmakers in existence and link watches are undoubtedly part of the fabric of modern-day link British watchmaking.
