...I can PROMISE you that these Meatball Mini-Subs with Pickled Onions would be included! Not only are they super easy, but they may be the tastiest meatball subs you'll ever eat.

You can make your meat mixture however you like it. I used one pound of lean ground beef and added grated onion, chopped fresh parsley, seasoned bread crumbs, milk, an egg, garlic powder, Italian seasoning, salt, and pepper.

I formed them into meatballs and placed them into a baking sheet. Each meatball is approximately two tablespoons. (I used a small ice cream scoop to make sure they were all evenly sized.)

I baked them at 450 degrees for about 20-25 minutes...

...and then poured over one jar of store-bought marinara sauce.

While the meatballs and sauce were back in the oven to warm through, I prepared the rolls. After pulling out some of the bread to make a well for the meatballs, I brushed the insides with garlic butter for even more flavor. I toasted them for about five minutes and then stuffed the wells with a slice of provolone cheese and some freshly grated Parmesan cheese.

I placed two meatballs into the wells on top of the cheeses, topped with some extra marinara, torn basil, more Parmesan cheese, and finally some quick-pickled onions which I made by pouring red wine vinegar over thinly sliced onions and adding some salt, sugar, and black pepper. The onions only need to sit at room temperature for about 30 minutes (or longer) and they are ready.
I know what you're thinking - Pickled onions on a meatball sub? The pickled onions brighten the entire flavor. Trust me. Try it. You'll thank me.

If you know me and my taste in watches writ large, this might come as a surprise to you, but I am into this one – link big link time. There has always been something about the streamliner link and its deco-vintage aesthetic that felt like something you might've seen at a World's Fair in the 1930s or a concept watch of the era that somehow took almost a century to make real.
