More time savers!

The other night two of our dear friends came for dinner and the goal was a delicious dinner, but on school days I do not get home until after 4:00pm, therefore I made a plan to save time which included a make-ahead White Tuna Vegetable Lasagna,
I made a well seasoned bechamel sauce using sautéed onions, butter, flour, and milk. Then I added four cans of really good Italian tuna, some fresh chopped parsley and seasoned with salt and pepper.
No bake lasagna noodles are another big time saver here! To build the lasagna, I added a layer of noodles, covered with a layer of the tuna mixture, followed by green and yellow zucchini, mushrooms, and some grated parmesan cheese. Then I repeated that step and topped with the final layer of noodles and tuna mixture.
To top it all off, I added panko breadcrumbs and more parmesan cheese which I mixed with olive oil so that it would get golden brown when baking.
Pretty! Tasty! Pretty tasty!
The lasagna screamed for a good salad and this one took minutes! This is my Bacon and Tomato Salad with Homemade French Dressing and it's as easy and delicious as it is quick! While the bacon cooked in the oven (another time and mess saver), I assembled everything and made the dressing. Then I just crumbled the bacon on top and it was ready to serve.
And of course every good Italian meal needs bread so I whipped up some Garlic Knots. Time saving tip - use store bought pizza dough! You can find it where you find the pie crusts, crescent dough, etc. Take it out of the can, cut it into eighths, stretch into a rope, and tie into a knot. Then brush with homemade garlic butter, pop it in the oven, and you're done!
This looks like the richest dessert ever. Nope! It's my Mini Ice Box Cake. An ice box cake is basically just whipped cream and whatever you decide to put in the middle - in my case, chocolate cookies. To make it a little tastier, I made chocolate whipped cream for the middle layer and dusted cocoa powder on top. I made this the night before as well so again, TIME SAVER!
Just because you don't have unlimited time doesn't mean you can't prepare an amazing dinner!
Oh and Ps - I whipped up a really refreshing mocktail with cranberry juice, lemon juice, simple syrup, and some lemon mango tea - I'm calling it a CosMOCKpolitan!

Looking back, Geronimo says the unusual circumstances surrounding the production of the link watch allowed its link creation.
