Recipe testing today! (Hint: Success!)

Today was opening day for the Baltimore Orioles, so before heading down to the ballpark, I thought I'd test a few new recipes for us to enjoy.
I've made fried chicken sandwiches many times, but I wanted to mix things up a little. So today, I made Benne Seed Fried Chicken on "BCBC" Biscuits (Buttermilk Cheddar Bacon Chive) and to kick them up even more, I made a homemade Tomato Jam.

I wanted the biscuits to be moist and flaky. The trick is cold butter, cold wet ingredients, and NOT to over-mix. I fried and finely chopped 6 slices of bacon which I added to the batter along with a cup of grated cheddar cheese and lots of fresh chives from my garden as they are the only herbs that are growing like crazy this early in the season. I brushed the biscuits with egg wash and sprinkled with coarse salt.

They were exactly what I intended!

I sliced chicken breasts in half lengthwise and soaked them in buttermilk and some hot sauce overnight. This helped make them extra tender and juicy. I breaded them in highly seasoned flour and when they were done frying, I sprinkled on the seeds and salt.

Tomato jam just seemed like the perfect condiment for this. Homemade tomato jam is way easier than it sounds. I just seeded and chopped some Roma tomatoes and added them to a pot with some red wine vinegar, olive oil, brown sugar, and some spices. After about an hour, it cooked down and the flavor was intense - sweet and spicy. Perfection.

And to go with the biscuits, I made Blackberries with Brown Sugar Vanilla Maple Yogurt. The sweetness of the yogurt was a perfect match with the tartness of the berries.

I think I passed this recipe test! Now to write them down so that I can make them again!
