Pepperoni Pizza Grilled Cheese! If a pepperoni pizza and a grilled cheese got together...you would be as happy as we were!
To make these even more irresistible, I made them on homemade garlic Texas Toast. I made the garlic butter for the bread by melting a stick of butter with a tablespoon of minced garlic, and a pinch of red pepper flakes, fresh parsley, salt, and pepper. Having the rest of the ingredients ready makes this very quick and easy.
I preheated the griddle to 350 degrees, brushed the garlic butter on the bread and grilled it until golden, and then flipped. This step is important because otherwise, the pizza sauce would make the bread soggy. Grilling the bread first allows it to hold up to the sauce.
I started with pizza sauce...
...then I heavily seasoned it with oregano, Italian seasoning, garlic powder, and onion powder...
...then TRIPLE cheese (Parmesan, Provolone, Mozzarella)...
...thick cut pepperoni...
...and finally fresh basil leaves.
I turned down the griddle to 300 degrees and let them go several minutes on each side until the cheese was melted and everything was heated. I served as shown with a side of Italian Tots (tater tots seasoned with Parmesan cheese, Italian seasoning, salt, and pepper) to help clear out the freezer. You could also make this vegetarian by leaving out the pepperoni.
