Trying all new recipes!

Last night I made three new food recipes and a cocktail/mocktail for the first time and none disappointed. First up, I made Pistachio Stuffed Loin of Pork. The meat was tender and flavorful, and it was surprisingly easy!

I made the stuffing using pistachios (buying them shelled in advance is a big time saver), scallions, parsley, salt, pepper, and olive oil in a food processor. Then I butterflied the pork loin and using a meat mallet, pounded it thin. I spread a spice mixture (coriander, cumin, mustard, salt, pepper) all over the fat side and then spread the stuffing all over the meat side along with some fresh chopped garlic. Then I just rolled it up like a jelly roll, tied it with butcher's twine, and then for even more flavor, I brushed the entire outside with Dijon mustard, and a bit more of the stuffing and spice mixture since I had some leftover.

To go along with the pork, I made Ina Garten's String Beans Gremolata. I had some bags of frozen string beans leftover from my garden harvest last fall. I blanched/shocked them to bring them back to life and preserve the color and texture. Then I simply sautéd them in olive oil with a homemade gremolata - lemon zest, parsley, garlic, Parmesan cheese, toasted pine nuts, salt, and pepper. So much flavor!

And I also tried another new recipe - Carrot and Leek Rice Pilaf and this was so easy because I made it in the oven. I simply roasted the vegetables with bay leaves in olive oil, salt, and pepper, and then I sprinkled on basmati rice, some boiling water, and more of the spice mixture from the pork. A secret ingredient was the addition of two cinnamon sticks. The most interesting result was that it screams "Spring" due to the vegetables, but the cinnamon sticks gave the dish a slight aroma of "Autumn".

And before the food was ready to be served, I made a Strawberry Ginger Smash. Also really easy! Simply muddle strawberries and fresh sliced ginger, add some lemon juice, and top with ginger beer (non-alcoholic for the youngsters reading), mix and then pour into an ice-filled tall glass. If you want to make an adult version - amaretto, vodka or gin would work well. I even stuck the metal straws in the freezer before I made the drinks to make them extra cold and refreshing! Perfect for a spring night!
