Weeknight special guest!

Our dear friend Tom was in town and finally able to come visit so a super special dinner was a must! But being a school night, I knew that time would limited. Proper planning was the key. The menu included Mozzarella Stuffed Polpette, Salmon Wellington with Smoky Red Pepper Sauce, and for dessert, Spiced Chocolate Budino.


The polpette were easy to make. I mixed the ground beef/pork mixture with pecorino cheese, bread crumbs, egg, milk, and lots of herbs. Once I formed them into balls and got them going in the oven, I made the sauce by combining crushed red tomatoes with some tomato sauce, sugar, chopped onion, garlic, and more spices and let it simmer away until I was ready to serve.

To make them extra special, I topped them with some Parmesan cheese and Panko bread crumbs mixed with olive oil. Then I popped them under the broiler for a few minutes and you can see for yourself how they turned out. Beautiful and delicious.

For the Salmon Wellington, I topped the salmon filets with a mixture of onions, garlic, spinach, artichoke hearts, cream cheese, dill, parsley, and salt/pepper that I had cooked earlier. Then I wrapped each one in a piece of puff pastry, made the cross hatch pattern with a knife, brushed with egg wash and sprinkled with flaky salt and more pepper.

While they baked, I made the Smoky Red Pepper Sauce in 3 minutes which is just roasted red peppers from a jar combined with some red wine vinegar, smoked paprika, salt, pepper, and some olive oil in a food processor, Then I heated it in the microwave for a few seconds before adding it to the plate. The Wellingtons were creamy and so filling but the acidity in the sauce was the perfect touch to brighten it up.

To save time, I made the Spiced Chocolate Budino the night before, It gets better the longer it sits anyway. It's basically just chocolate pudding but to kick it up, I added some orange zest, ground cinnamon, and a pinch of cayenne pepper. The heat of the cayenne pepper pairs beautifully with the chocolate. I infused the whipped cream with orange and vanilla extract, and then added more orange zest and cinnamon for decoration and even more flavor. These are SO good and SO easy to make.

I've been so busy with music festivals and school functions, I have not had much time to cook so this gave me my fix while being able to catch up with a dear friend. Like any good teacher knows, proper planning makes life so much easier!

Who – most of the time – hand make their products at home or link workshop, educate themselves and link improve their technique so when their product reaches you and you put it on the link timepiece would feel what they do right after they finish your strap: satisfaction and pride.

I enjoyed the attention; I have said before, I want a watch that people can link see coming. I had a gold Cartier Tank Française for a month. No one said a damn thing about it. This was disappointing, link and unacceptable, like: Hey, Tank, I know you're an icon but icon believe how many people just link don't notice you.
